This morning I made a really quick and delicious breakfast sandwich that I wanted to share with everyone. Sometimes when I go to bed hungry at night, the only thing that keeps me from going to the fridge at 11 p.m. is the promise of a yummy breakfast. This morning's sandwich really hit the spot! I would say my favorite part was the bread. I found a local bakery that produces bread with 5 ingredients: freshly milled whole wheat, honey, water, fresh yeast, and salt. This made me so excited because all of the preservatives in the bread you find at the supermarket aren't all that great for you. When buying food you should be conscious of what's on the label. A great rule of thumb: simple=better. So back to the sandwich... Here it is!
Two eggs (salt and pepper for seasoning)
Two slices of turkey bacon
Two slices of whole wheat bread
1/4 avocado sliced
A dab of cream cheese
Fry the eggs to your liking (or you could scramble), cook your turkey bacon while the eggs are cooking and toast your bread as well. Smooth your cream cheese and avocado on one slice and then add the eggs and bacon. Voila! So simple, so satisfying.
